Lunch Box Fillers

 

Here are our favourite lunch box fillers to get you inspired into making exciting alternative snacks for school!

Pizza Scrolls – makes approximately 24

Ingredients:

  • ½ cup grated cheese
  • ¼ pizza sauce
  • 2 sheets of puff pastry

  1. Preheat your oven to 200c
  2. Combine the ham and cheese in a bowl
  3. Spread the sauce & filling onto each sheet of pastry, leaving a 2cm border on one side
  4. Roll up the pastry to enclose the filling (like a swiss roll), leaving the plain edge until last
  5. Brush the plain edge lightly with water and fold to seal
  6. Cut each roll into 1cm rounds, using a serrated bread knife, and place on lined over trays
  7. Bake for 20 minutes or until golden

64-Peanut-Butter-and-Jelly-SushiPeanut Butter & Jam Sushi Rolls – makes 8 rolls

Ingredients:

  • 2 tablespoons creamy peanut butter
  • 2 tablespoons of your favourite jam

Method:

  1. Remove the crusts from the bread. Flatten the bread slices using a rolling pin
  2. Mix the peanut butter and jam in a mixing bowl and combine well
  3. Spread a 1cm layer of the mixture
  4. Roll each slice into  tight spiral, cut each spiral into 4 pieces

No-Bake-Chocolate-Chip-Granola-Bars-410x273No-Bake Granola Bars – makes 24 bars

Ingredients:

  • 2 cups of rice cereal
  • 2 cups of oats
  • ¼ roasted almonds chopped
  • ¼ roasted sunflower seeds
  • ½ cup shredded coconut
  • ½ cup dried fruit
  • ½ cup peanut butter
  • ½ cup honey
  • 1 teaspoon of vanilla essence
  • 1 cup chocolate (optional)

Method:

  1. Combine rice cereal, oats, nuts, coconut, seeds and fruit into a mixing bowl (and chocolate if you like)
  2. Heat the peanut, honey and vanilla in a pan (do not boil) until combined
  3. Pour the heated mix into the dry ingredients in the bowl
  4. Mix well
  5. Pour the mixture into a lined baking try and spread out into the depth that you would prefer
  6. Cover with plastic wrap
  7. Cool completely & cut into bars
  8. Wrap individually and store in the fridge for up to 2 weeks
